And here it is, the last recipe idea for this month. It’s a super easy and quick idea to do at home (or when you are camping 😉 ). Especially, when all you have left in the fridge are some eggs and baby spinach leaves. 😀
So, the ingredients are:
* 4 free range eggs
* 1 tbs mixed fresh herb leaves, roughly chopped
* baby spinach leaves
* olive oil
Firstly, whisk the eggs, pepper and the herbs in a bowl. Then, add some olive oil into a frying pan and heat over medium-low heat. Pour in half of the egg-herb mixture and tilt the pan until the base it evenly coated. Cook it for one minute. When the edges set, use a spatula to flip the omelette to the other side. Cook the other side as well for one minute.
Transfer the omelette to a plate and add some baby spinach leaves on top. If you like, flip half of the omelette to the other side.
And then repeat the same procedure with the remaining egg mixture.
