Cold served it’s a classic antipasti idea you could serve for lunch. Or, freshly baked in the oven – simply delicious!
For this recipe you’ll need:
* 4 tomatoes
* mozzarella cheese
* olive oil
* salt & pepper
* 4 tb of pesto
Firstly, preheat the oven up to 180°C. Take a baking tray and spread some oil on it.
Wash the tomatoes and cut the upper part off (don´t throw it away, you’ll need them). Now, put the tomatoes and the halves on the baking tray and spread a bit of olive oil on them, too. Bake them for about 15 minutes. Cut the mozzarella cheese in slices and put them in a bowl to which you add 4 tablespoons of pesto sauce, salt and pepper. Mix everything together.
Afterwards, take the (careful!) hot tomatoes from the oven and add some spoons of the mixture you’ve made before. Put them back in the oven for about 5 minutes.
Take them out, put the upper part of the tomatoes on the stuffed part and arrange the tomatoes on a plate. Delicious! 🙂
