Last night I’ve watched a documentary about food in Japan. I got hooked on one of the recipes with omelette and a lot of green onions. But, I wanted to try a lighter version. Therefore, I came up with this yummy “sandwich omelette” idea. 😀
For this recipe you’ll need: four eggs, salt, green onions, bell pepper, mushrooms, mozzarella, frying oil, two pans
Firstly, scramble the eggs in a bowl and add some salt to the mixture. Now, cut the bell pepper, the mushrooms and the green onions into small pieces. Put some (olive) oil in the pan and add the vegetables. Let them fry for around 5-8 minutes.
Meanwhile, use half of the scrambled mixture to make the first omelette. When one side is fried (until its light brown) turn the omelette over to the unfried side and wait until this gets brown, too. Put the first omelette on a plate and add some mozzarella on top of it. It will melt soon, because the omelette is still hot. 😀
While you make the second omelette with the other scrambled mixture, add the vegetables on top of the first omelette.
Now, add some mozzarella on top and put the second omelette on top – like a sandwich. 😉
You might garnish your omelette sandwich with some vegetable leftovers.
