Homemade mushroom dip

Homemade mushroom dipToday it’s time for another homemade recipe idea. And because I bought too many mushrooms, I want to make a mushroom dip out of them. 🙂

What you’ll need:
– an onion
– 300 g mushrooms (depending for how many people you cook)
– 5 tablespoons of vegetable stock
– salt & pepper
– cornstarch
– red bell pepper
– a bowl
– a pot
– a hand processor

First of all you need to wash the mushrooms with water. Afterwards, chop up them up roughly and put them in a bowl. Now, slice up half of the onion (or the whole one) and let them cook for a few minutes in a pot (until they are a bit brown). Add the chopped mushrooms and let them cook down for five minutes.
Then, add five tablespoons of vegetable stock and let everything simmer for about 20 minutes. Use the hand processor to blend everything until it gets nice and smooth.
If you want to thicken the mixture up a bit, whist together some water and cornstarch in a bowl. When your mushroom mixture is boiling, add the cornstarch-water mixture and mix everything together. Add some salt and pepper.
